I have lost my full screen in Castle Story on my ipad Air. I have shut down, restarted, but so far nothing has worked.

Are you using the iPadOS Stage Manager feature that shows "windowed" Apps? If yes, try using the alternative Split View & Slide Over mode:
Settings > Multitasking & Gestures > [Multitasking] - select Split View & Slide Over
Alternatively, if you need to use the Stage Manager windowed view, try re-sizing the App window:

Try and grab the side of the game screen and drag it over over the whole of the screen to see if the issues persist
