I have noticed this symbol on a couple of my photos in the bottom right corner of the photo when looking at all of the photos in the library and also it’ll be next to the picture information area when I click the info icon. When I click the actual picture it will disappear but if I click the info icon it will be next to the photo information. What the heck does it mean?

If you mean the icon that looks like a bowtie or an old ad for a wide-screen movie, that's the indicator for a panoramic photo. It usually means a photo taken in actual "panorama" mode on the phone, but apparently it can also mean a photo cropped to a similar aspect ratio.

Apparently. This is a picture taken with my Nikon in normal 4:3 mode and cropped to help focus on the interesting parts rather than on the dirt and bushes. Photos considers it a panorama.
The pictures I have that are called "panorama" all have a width that is more than twice the height.
