So my iPhone 12 Pro Max has started having an issue with overheating that started recently. What is the cause of this happening? It also has been having episodes of where the screen dims for no apparent reason.

Are you seeing the screen with the thermometer on it saying your device has been shut down due to overheating or something else?
If you see a message when charging that your device has been placed on hold to cool down before continuing. That is normal and happens when it has been fast charged to about 80%. Fast charging produces heat, so after a short period of time for cooling, it slow charges the rest of the way to preserve your battery health.
