I am trying to create folders/Collections of the books I am reading on Apple Books. These files are all epubs. Whenever I try and move some to a folder, it duplicates each epub file. Why is it doing that?

When epubs are moved to another collection you need to remove it from the collection you don't want it in (but they can't be removed from the Books collection). It isn't really duplicating ie it isn't increasing your storage space.
