I’ve followed the Mac OS system settings method for adding a keyboard shortcut for text strikethrough, but can’t get it to work. Using the format drop down strikethrough icon is cumbersome when italic, bold and underline still have keyboard shortcuts. Any suggestions on how to get that keyboard shortcut back?

I use ^⌘S for this purpose. In System Settings > Keyboard [ Keyboard Shortcuts… ] > App Shortcuts > Pages
This shortcut works as a toggle to apply or remove the strikethrough. It is important to use the exact spelling as found on the menu item for Strikethrough.
