Apple Mail header only shows my full name, not the address to which it was sent.

Like many, I have different email addresses for different kinds of people and businesses I deal with. When I need to see which of my email addresses the sender used, I cannot do that. Tapping on my name only shows my first name. A second tap opens my page in my Addresses. I do not understand the justification for that.
