When I start Notes, iCloud & an email account are showing

Don't know what I did to create this scenario

Please direct me to the correct link to understand this

I can collapse iCloud & the email address and still create "Voice recordings", but it's confusing.

Is there an App Guide for each individual App on my iPhone 12 mini?
