I’m an American and my devices weren’t bought in Mainland China, but I do

spend time in Shanghai from time to time. So I’d like to change the search

engine that Siri uses for results from Baidu to Google.

You likely can’t. The Chinese Government has strict regulations, which one that Google is banned. Even if your products weren’t purchased there, there are still ways to detect if you’re there such as your IP address or your carrier and apply those restrictions.
