I cannot send an email—with Apple Mail—with any italic text. I've checked the settings and made certain that rich text is chosen (not plain text). But then in trying to compose a new email, as soon as I start typing, the font style choice for italic grays out.

I did all that. Plus changing the font didn’t matter.
One specific thing I noticed from the start: As soon as start typing in the main message area, the “I” icon in the small menu at the top grays out immediately, negating my ability to italicize anything.
Are you selecting the text and then clicking on the italic button?
Also try a different font.
