In addition to each text I need date and time printed off next to each tex. This email string would take over 100 screen shots. It’s needed for a court case so it needs to be an easy to read report.

You'll need to purchase 3rd party app like touch copy or imazing to export the data from your phone to computer or mac.
razmee209 gave you good advice. Personally, I use iMazing.
I would add, however, that if this is for a court case, you talk to your attorney before doing anything.
