Itunes/Music Updated now there's no search bar for songs or ability to convert

I've mainly used iTunes on windows and would occasionally have an issue after an update but would be able to navigate and add status bars back and such. I've been working on transferring my library to my Mac and today when I got on the music app it seems to have updated and messed things up, I thought I had all updates shut off. Anyway there's supposed to be a search bar on the to right to search songs but its not there and I can't find a way to put it back. There is an option to search the library on the left but its inefficient and doesn't work in the songs list, there's an option to view songs but its not the songs list, they are all out of order and you can't select them or change the order, I need the option to view by albums, or by titles, or by artist etc. I need the songs list and to search with in that I can't scroll though thousands of tracks to get to the area I want.

Another thing I noticed is there's no option to convert files. There used to be an option in the preferences to choose what file to convert to, like I pick mp3 and then you can right click and convert a song, that's gone as far as I can tell. There is an option to convert under file but the only option is an aac version.

These are just two things I've noticed so far but they are essential to how I organize music. Is there a way to get them back? If not can I download a version of iTunes for Mac that actually works that won't be subject to useless updates that break it? Or is there an alternative music organization program that's comparable to what iTunes used to be?

For example playlists are how I keep things organized, from individual albums, to custom tracks, to playlist folders for specific categories. Also I go to info and edit the start and/or stop times and convert it to mp3 so it doesn't change the original file (Also to convert iTunes purchases to play on other devices). If I can find something that displays music like iTunes song list and can search it, make playlists easily and organized, and edit start and stop times and convert files to mp3 easily that would be great.

Hopefully the solution is in the music app or downloading and version of iTunes, but if not I'll be looking else where for music organization.
