Stream music from Apple Watch Ultra 2 without phone

I have an Apple Watch Ultra 2 paired to apple AirPods pro2 and I would like to stream music from Apple Music or Pandora or Spotify without the phone nearby or WiFi connection. I have a cellular account that supported this on my older model Apple Watch.

When I open the app on the watch away from the phone and WiFi there is no streaming even though I have cellular connection and the status indicates “connected”.

How can I stream music without my phone when running or hiking?
