Apple Mail won't attach anything to emails (PDFs, TIFF, Jpegs, Pngs etc)

I love when you don't update your Apple products the system starts acting wonkie and then when you DO update it gets worse....

I've been using Apple mail for work for the last 9 months-year no issues with Apple mail. Everything attaches fine unless it's large, I have no strange or outlandish settings for attachments just straight PNGs or Jpegs or PDFs mostly. Within the last month, I've been having issues with Apple mail's messages showing up as repeated "AAAAA" or "!!!!!" or "??????" and now, all my attachments for emails aren't being sent to people. Yesterday it was just PDFs and I could attach a photo. Now I can't attach anything. The only thing that changed is that I updated the system. Again the way I make and save photos and documents have not changed. I can't even send things I was successfully able to send a month ago.

Is there a way to delete and reset the app or something? Cause at this point I'm probably going to have to use something else. I don't want to use Microsoft on this Mac. I work on a Mac mini brand new 2024. Has been giving no issues up until now.
