My Health app stopped working on May 31st. It is not recording any data from Fitness app, and others. Both, iPhone and Apple Watch are up to date. I restarted both devices, unpaired and re-paired Apple Watch. Nothing works.

Yes, it's still the original battery with a maximum capacity of 87%.
Here just some additional observations:
1) In my Health profile, I cannot set up my health details. Once I put them in, press done, they disappear immediately and are not saved. The same happens in my Fitness app.
2) In my Health profile -> Privacy -> Apps If I click on the following apps, I can only see a spinning wheel: ECG, Fitness, Health, Sleep
3) Under Settings -> Apple Account -> iCloud ->saved to iCould ->see all , the Fitness app is not appearing in the list of apps.
I would be so grateful, if someone can help me solving this issue.

That's ok, as it's well above Apple's 80% level for replacing the battery. If you prefer not to wait for more possible suggestions from others here, consider contacting Apple:
