I read that I can disable AI overview by going to Settings>Apple and Intelligence and switching of Apple Intelligence. Unfortunately my old iPad (OS 16.7.11) doesn't have anything in Settings referring to Apple Intelligence.

What AI Overview are you talking about? Your iPad does not have Apple Intelligence. If you mean what you see from a Google Search, that is something Google is providing to you from the search results. They do not allow you to remove the AI Overview, but you can certainly use a different Search Engine on Safari where you will not see them. That has nothing to do with Apple and will appear on any device that gets its search results from Google.
