Apple Watch Ultra tracking inaccurate sleep stages and heartbeat

I have found that the watch is very inaccurate at tracking sleep stages, as many nights I will have zero time in deep sleep so I bought an alternate tracking and find that I get well over an hour to almost two hours of deep sleep while my Ultra 2 still says zero. Additionally the heart beat monitor will completely go blank while cycling or worse yet I will just go out the driveway and it says my heart rate is over 150, when my alternative tracking has me at 90-95. Spending this kind of money on a watch maybe Apple instead of spending time and energy creating all these ridiculous face options invest their time in getting the watch to work correctly.
