How can I fix the incorrect date/year on my iPhone 11 Photos app?

Suddenly the year on my pictures are hundreds of years in the future

have you checked the Settings of your iPhone in the Language &Region settings, if the entry for Calendar is set correctly?

Changing to a different Calendar can change the dates by many years.
