How do I select the opening screen when opening Pages on my Mac Studio?

How do I select the opening screen when opening pages. It currently opens a window in an obscure file folder. I would like to change it to open with "recents" folder or perhaps the last document. Can't find any way to change it. I am using Sequoia 15.5 (24F74) on a Mac Studio. Thank you for your help.
