Is it possible to change the sound Voice Control makes when confirming an action? Turn it off, yes, but I would rather change it if possible.

Seems the only option is on /off In Settings > Accessibility > Voice Control.
If you want more control, you could let Apple know: Eg: You can send feedback or a feature request
