The animation disappeared when I close one of the activity rings. How can I get it back?
Previously, the animation of closing activity rings worked flawlessly, but now it's gone, and it's harder for me to track activity.

I'm afraid, Apple removed this feature, all I'm getting is a notification and a picture of all closed rings, no animated fireworks anymore.
However, if you use the Feedback link, you can tell Apple directly about your wishes for future watchOS updates.
This is the only way to reach them, as Apple does not follow theses user to user communities.
You solution works! Fireworks are back, if “Tap to show full notification” is disabled in the Watch App.
But watchOS 11.5 or iOS 18.5 brought back the Screenshots issue. Those are not being saved on the iPhone unless I restart both devices.
AFAIR you need to go to iPhone, Watch app, My Watch tab, Notifications and turn OFF “Tap to show full notification”.
Yes they were.
What solved this issue for me was, disabling the screenshots in the WatchApp/General, restarting the watch, and enable the Screenshot feature again.
All good now 🙂
So, If I understand this correctly, Apple will have to implement the option to disable “Tap to show full notification” into the settings for Notifications/Activity, if one would like to keep the summary being shown for the rest of the notifications on the screen.

FWIW it works for me, saves to iphone in under 5 seconds.
Wouldn't this setting unhide the details for all notifications?

Yes. That's how I lost fireworks first time round, some other helper, probably the late FieryJack fixed it for me.
Apple could make it much more flexible yes. It has been two OSs since I worked this out, the OP needs to test it for day
