If you have a system that needs to be accessed by others on the network, then that system & network should be configured differently so that an IP address change does not affect access to the shared resource. Either the network should be configured to provide the same IP to the shared system, or you should be using a DNS name to access it. If all systems are on the same subnet, then you can access a shared system using the computer's network name such as "HWTechs-Mac-Mini.local" (such a name is shown in the Sharing System Settings).
but when we try to mount the drive, it gives us a login screen, but then says "there's a problem". All the Macs trying access this drive are running Sonoma 14.7.6. We have a workaround accessing the Mac using Screen Sharing, but we all can't use that at the same time.
Sounds like a Sharing and/or Remote Access issue. Try turning off Sharing & reboot. Then re-enable Sharing. If that doesn't work, then remove the current Sharing setup, reboot & start fresh with the Sharing configuration setup.
I'm not sure what settings or configuration items which might be saved on the Sequoia systems that are trying to connect to the remote share. I would look to wipe any such save settings. Perhaps they are still referencing the old IP address and is getting confused with the login or connection.
FYI, Macs have always had odd file sharing issues.
