Safari showing web browser page instead of iPhone style browser

My iPhone is running iOS 18.5 and has an issue with Safari - it is showing a desktop style browser page when viewing websites such as Google, Amazon, Wikipedia, etc. how do I fix this? I have tried updating to the latest iOS, restarting the app and my iPhone, but nothing has worked. I will attach an image of what happens when I try to search on Google. Thanks!
