It is an internal model identifier. The numbering scheme is separate from that for iPhone model names.
MacTracker shows that model ID iPhone16,1 corresponds to exactly one iPhone model: the iPhone 15 Pro. (With Macs, Apple has sometimes used a single model ID for models from several different years!)
It doesn't mean that an iPhone 16 device signed in to one of your accounts.
It sounds like the message was simply a log entry saying that your iPhone 15 Pro (model identifier iPhone16,1) had applied some sort of update to itself. Something that might be of interest to a developer or to a support person in the event that they were trying to troubleshoot a problem happening with a phone.
Since the message probably wasn't meant mainly for your consumption, whoever coded the message felt free to use an internal model identifier instead of your phone's official marketing name.
