It will continue to work until your month is up, and it's time to charge your card again. As long as you have the USD available in your bank, it will approve it automatically and continue to work indefinitely.
While the subscription may renew automatically, and charge the card, without an Internet connection, the Music app will not be able to verify it, and as such the tracks may stop working. That's the point. Eventually verification will be required for the tracks to continue working and that will by definition necessitate an internet connection of some type.
Tracks from the Apple Music subscription service have a limited lifespan when offline. As mentioned Apple does not specify what this time frame is, but eventually after a while the subscription will need to be re-verified. It should just be a few seconds online for it to happen though.
However, if you do happen to have Wifi to connect it to during your visit to China, it will not interfere with anything, and you can continue to stream your music with no issues.
This is mostly correct. China can block services and access, but in general the Apple Music subscription should be unaffected and streaming should still work fine.
