iTunes as a metadata editor

Pretty basic, yes.

When I alter artist, track or album data in iTunes does it alter the media file data as saved on disk?

If not, how do I maintain the "integrity" of the saved data - as I have altered it?

Yup, pretty basic - although, lots more questions depending on the responses I get. (if any)

Thanks

Typically any metadata edits made in iTunes are reflected in the file stored on disk. See Repair security permissions for iTunes for Windows - Apple Community for advice when such edits don't stick. Note tracks in .wav format, or that for other reasons don't have a tag, won't get updated. iTunes can add or remove a tag in some cases. If you have allowed iTunes to keep the iTunes Media folder organized then edited tracks may also be renamed/relocated to reflect such changes, in addition to updating the tag. There are various properties in iTunes that are not written to tags, for example rating, checked status, playlist membership, EQ, etc.

If you are adding .wav files into an iTunes library I suggest turning off the advanced preference to Keep iTunes media folder organized so that imported files aren't moved to an Unknown Artist\Unknown Album subfolder. I have a script called TagFromFilename that may be able to apply details captured in the file path to properties in the iTunes library. Ordinarily iTunes will simply use the filename, including any initial track number as a song name, and leave other details blank.

I would recommend converting .wav files into Apple Lossless. You get smaller files with all of the original audio data and full tag support.
