The downloaded music will remove with expiration of Apple Music subscription but the music in your Library and your playlists will still be there. I paused subscription before and it seems the library is empty but when I subscribe back the library and playlists reappeared.
Apple Music is a subscription service; a rental.
The downloaded music is protected by DRM, and that music will be unavailable when there is no active subscription.
Apple doesn’t indicate how long playlists are preserved after a subscription lapses. Apple Music playlists can be shared, and can be exported from at least macOS and maybe Windows. That would probably provide a means of preserving that playlist data over a gap in the subscription, though I’ve not tried that.
