So I met a guy at a marketing event from New York gave him my phone number or he gave me his and when I called him, it showed up as my wife’s name instead of unknown caller, which is the norm. We soon to be divorced and I feel like she’s tapping my phone. Anybody else experienced this?

She is not tapping your iPhone, your iPhone is not susceptible to spyware. Instead I believe you guys are sharing an Apple Account, which you should not be doing. Each and every person should have their own Apple Account, and they are not meant to be shared.
If your Wife is the account owner of the Cellular plan, then it may be her name used for Caller ID when calling anyone that has not put your name in their Contacts. That is a service of your cellular provider. I have members of my family that will show up as their Mother, unless I add their number to my Contacts with their name, then it will show up as them instead.
Possible that you and your wife were using the same Apple ID on your phones?
