how do I stop syncing across devices with apple music
I am removing my apple music library from my mac to save space, but want to preseve it on my iphone, how do I do this?

I would suggest instead moving the library to an external drive, so that you at least have a backup of the music should it need to be copied to your iPhone again.
Due to Apple's unfortunate naming strategy I need to ask if you have a subscription to the Apple Music service, or are simply referring to the Music app on a Mac. If you have the subscription service then rather than delete things from your library you can use the ctrl/right-click > Remove Download option to free up local storage without removing items from your cloud library. I'd still recommend backing up the library to an external drive first before you do this.
