Several of the watch complications are missing from the watch iPhone app and on the watch face. Weather is not a choice and neither is AQI or my calendar. Watch series 7 iPhone 15 po max. Latest update and it just stopped. Hard reboot added removed complications from the app and the watch directly. I also noticed weather keeps asking me for location permission.

You can only use the Workout complication, if the Workout app is actually installed on your watch
If the default Apple Workout App is not installed, try to download it again, using the AppStore on the Watch, after that you should be able to add it to your Watch face as a complication.

Can you add the workout app to another watch face?
To rule out a software issue, erase the watch and set it up again as a new device, without using the latest backup:

Yep did all that thanks. And from your link weather is shown as an available option in the list of available complications but from the photo below is not available as an option on the actual app on the iPhone or the watch. Screenshot from the alphabetically listed W section on my phone with Weather missing
Check on your iPhone/Settings/Privacy & Security/Location Services/Weather -> While Using the App should be enabled as well as "Precise Location"
Also, Apple changed the available options for the Photo Watch face in the newest watchOS 11 updates.

Is the Weather App installed on your watch?
Do you get the option to select the Temperature complication?
Yes and no. When I swipe up and go to the app list at some moments it’s there and others it disappears.
The workout app was never missing.

Also make sure that on your iPhone in Settings/Privacy & Security/Location Services, Weather is set to "While using the App" and "Precise Location" is enabled.
