Highlighting italic text in Pages doc
Is there a way to highlight the italic text in a Pages doc. so I can make sure I have applied italic to it all once pulled into InDesign

InDesign can import Word documents, but not Pages documents. Unless you test it, there is no assurance that you can copy/paste a Pages character style (highlighted, italic text) from Pages into InDesign with satisfying results.
If the font that you use in Pages has an italic style, I would recommend using that font instead of the regular font that you select and then clicking the italic button. Then use the More Text Options panel to set the proper highlight color from the Text Background inkwell or color globe.
