How can I restore my Apple Watch from iCloud backup successfully?

I couldn’t find my watch for 9 months (I had other priorities), but today finally I searched for it in my house and found it.

I immediately saw that there was no more connection between it and my iPhone 15 Pro Max. The iPhone (watch app) couldn’t see it and didn’t list it as paired. Finally I had to initialise the watch and chose RESTORE from the 5th of May (see 05.05.24 in the pic). But it didn’t work… it was initialised and “synchronised” as a new device (I lost my settings).

I initialised it again and again it didn’t work.

It’s not the first time that I need to restore from backup (I PAY extra space) and it doesn’t work!
