Notes randomly disappear. No rhyme not reason, not deleted

This is an annoying issue that happens randomly, and there is no way to document it.

Usually notes works great. I use it for EVERYTHING - from taking notes in meetings, to writing down phone numbers and names and then transferring them to contacts, to jotting down ideas that come up.

BUT!! Every so often, a note simply disappears without a trace. It isn't in the Deleted folder. It isn't moved to a subfolder. Just - GONE. POOF. Since it only happens occasionally, it is impossible to document. For really important info, I sometimes take a screenshot of a note - but that only helps if I remember the DATE i took the screenshot...

You see the issue. The only explanation for missing notes is a sync issue, but the Sync feature is on and it works 99% of the time. It's that 1% that is maddening.

Apple won't provide any fix for this nor admit that it happens... but I have lost truly important information this way, to the point that I am thinking of switching to an Android phone after many years of Apple only products.

Anyone have any insight?

PS, for some reason, the Community puts "iphone 6 Plus iOS 12" when it makes me select my device under my comment, but this is WRONG. I have an iPhone SE and iOS 18.3.1. Apple has become so buggy....
