Hi! I'm trying to turn off Apple Intelligence in the latest update. In settings under Apple Intelligence, it seems there's no option to turn off this feature. Any suggestions would are welcome!

It is there on my M4 Mac Mini also with Sequoia 15.3.1

Apple Intelligence is Only Available on Apple Silicon M1 / M2 / M3/ M4 Computers
The button is there for me on 15.3.1 on an M1 Mac Mini.
That option is not available. It seems they removed that option in 15.3.1 as it's not available as I mentioned above.
The best I could do is go turn it off for every single app installed, but seems they removed the global option.

So NO I did not see what was Not There
If the Option to Turn OFF is not Present, it was Not Turned ON
What is your specific Mac hardware? If it's old, it might not be supported for Apple Intelligence which is why the option to turn it off is missing. You don't have Apple Intelligence capability if your hardware is old enough.
System Setting >> On left panel >> Apple Intelligence
On Right >> turn OFF
