How do I optimize system data Mac mini?

Why do I have 80 GB of system data and have only downloaded one app on my mac mini.

I got told that there shouldn't be so much GB in system data. The amount of gb is getting higher and higer. I have had lots of IT people on the problem but no one can do something.
