Severe MIgration Assistant problem

I am migrating from a 250Gb SATA drive out of an expired Macbook Pro (old one!) to a new Mac Mini.

Connected the old drive to the mini with a SATA>USB adaptor, and it shows up just fine.

Migration assistant finds it, and (after some time) allows me to select items to migrate.

I then sits "starting up" seemingly for ever - certainly a day or so.

On one occasion it *did* start, and after about a day died, and dumped me back to the normal desktop with only part of the migration complete.

I had a similar problem with a Backup from macOS El Capitan to a new Mac running macOS Ventura. I believe this is a bug with the setup Assistant. Try to plug in the drive to the new Mac and run Disk Utility's First Aid Feature. Then just transfer all the essential folders, and Applications. If you have an Apple Photo Library from the old Mac, transfer the old Library to the new one.
