Hi, I have been update my macbook m1 lastest version of MacSo 15.3 but isn't showing up apple intelligence on settings. Can you help me out?

Do you have an M1 chip or later? Sadly, Apple Intelligence is not compatible with Intel Macs. If you are not sure, if you bought this before November 2020, it is intel. I reread your problem. Seems like you do have M1 but please make sure. On the support website, (How to get Apple Intelligence - Apple Support) it says 7gb free storage required. Looks like you have all the other requirements.
go to System settings and on the left look for Apple Intelligence and Siri. Four down from General. Opening you have a choice to turn off or leave on. Apparently no option to choose applications, so when replying to emails, look-out.
