So I messed up some stuff by changing the album art for some albums on Apple Music how do I get back the original cover? 😁 (I use the Apple Music windows app since the iTunes windows app is so garbage that it keeps crashing and also they removed the music section from the iTunes app as well)

Installing any of the Apple Music, Apple Devices, or Apple TV apps hobble iTunes so that it can then only manage audiobooks and devices. Personally I think Apple Music is less capable than iTunes. Often a complete tear down and reinstall of iTunes can resolve issue you have with that.
That aside, neither iTunes nor Apple Music provide an undo method for large scale edits that turn out to have been a mistake. Ideally you would maintain a full backup of your library such that you could restore it in whole or in part following such an incident. See Backup your iTunes for Windows library with SyncToy - Apple Community for a general approach, than can be adapted to cover your Apple Music library.
I've just spun up a copy of Apple Music library on a test machine to see if I can select a range of items and batch delete the artwork from them, but I cannot find a way to do it. More evidence that Apple Music is a poor substitute for iTunes if you are interested in adjusting metadata in any way and not simply playing content directly from their catalog as is.
