The Mac and the iPhone do not "pair" in the normal sense as you would headphones to a computer.
All that is required in most cases is that Bluetooth be enabled on both devices and that they are connected to the same wi-fi network. The same Apple Account should be signed in on each device as well.

Macs and iPhones have Bluetooth – but don't pair with each other using it.
You set them up to work with each other in other ways, e.g., using iCloud synchronization, connections to the same e-mail accounts, and Continuity features. Some Continuity features may make use of Bluetooth, but they do that in ways that do not involve pairing.
