I'm using an iPad (iOS 18.2) that, since the last update, loses video at approximately 10 minutes and audio after another 10 minutes; no other devices are in use. I tried using an older iPad (iOS 17.7.3) and had no problems after 2 hours of continuous FaceTime. The problem with 18.2 iPad occurs regardless of whom I'm connecting with; I use the iPad at home and have a fiber optic connection.
