CarPlay Crashing when activating SIRI (iOS 18.2, iPhone 16 Pro, 2024 GMC Yukon)

I have a 2024 GMC Yukon, and my iPhone 16 Pro is running iOS 18.2. For some reason, since the other day, every time I try to use Siri when CarPlay is activated and on (doesn't matter if I'm playing music, or in any other application like Maps, etc.) it quickly disconnects CarPlay and reconnects. The entire sequence takes about 5 seconds to turn off and turn back on. So, for example, I'm listening to music, and I ask Siri to text someone, the glowing rectangle comes up on my car display and then CarPlay disconnects for about 5 seconds and reconnects. Once it reconnects, it just goes to the home screen.

Another example would be if I click a new iMessage or text message. the glowing rectangle pops up on the outer edge of my cars display and then CarPlay quits and reconnects. Once it's reconnected, in this instance, the text is shown as read even though Siri never reads out the message to me.

I've removed my phone from my GMC multiple times and reset it up as a fresh bluetooth pairing. I've scaled back to the "old SIRI" by taking the new Apple Intelligence features off, etc. and that still doesn't fix the issue. See below my current SIRI settings, and again I'm using iOS 18.2 (with no pending updates).
