Nothing can hack your iPhone from a camera, at least not unless the iPhone is jailbroken in which case all sorts of bad things are possible.

If your iPhone is set up with Family Sharing, then you can remove yourself:

Leave Family Sharing - Apple Support.

But Family Sharing or parental restrictions doesn't give her access to information on your phone; it only allow her to block various functions and apps. The only way she could have access to photos, contact, etc absent having physical access to the phone and knowing its passcode is if you have them synced with iCloud and she has (or had) your Apple Account information.

You may wish to consider resetting your iPhone to factory settings. This may be unnecessary, but it should help ease your fears.
