Looking to replace my 2015 iMac with a Mac Mini and debating on the Apple Monitor or go with a third party monitor and maybe go with 30”. I use the full Adobe Suite for graphics, photos, etc. as well as SketchUp for some architectural models. The Mac Mini is maxed out for options. Any thoughts on the Apple 27” display or a third party display.
You can use most any aftermarket display with the new Mac mini's.

If you are having difficulty choosing a Display on-line, then go to Best Buy and do some comparison shopping.
I have the LG 27" 5K and the Apple Studio display. Both identical display (picture) but the Studio case is much nicer but the LG is about $600.00 less. Both work great. I'm sure you could use a 4k display if you can take a lesser quality picture and save on cost.
I never had a monitor not work with the macs I had, my current mac mini is connected to a old 17" Samsung LCD using a thunderbolt to dvi adaptor used to be connected to my old 27" asus LCD by a thunderbolt to dvi too before the asus died.
