I have a 300 page manuscript where I made changes in red (for a reader), and now I want to change the whole document to black text. Is there a way to do it all at once, or do I actually have to go through one at a time and change each piece of red text?

You'll need to change the style. Let's say the Body style is red, select a word, in the Format sidebar change the Text Color to black and you'll see an Update button next to the style at the op. Click it to apply the updated style to your whole document:
If you were using the Edit menu > Track Changes and set the Author color to red, then your only option is to accept changes which will then change the red Author color to black. Otherwise, you reject all changes. There is no black Author color, nor will the Pages color chooser override that red Author color with black.
