If you did not want it, yes, you should have said no at that point.
But if you said yes, you are free to turn it off in System Settings any time you want.

Certainly, I've disabled it. At the moment, I don't see any benefit from it. I know I should have waited, but the milk has already been spilt.
No, but you can turn it off it you enabled it at some point. It's not enabled by default.
System Settings ➜ Apple Intelligence & Siri ➜ Apple Intelligence switch, turn it off.
You can turn it off in Settings.
