I have the first gen Ultra and it's giving me this problem too. Intermitently. Take it off and the screen is back on again. Yes, very annoying. Does Apple acknowledge this issue ?

Have you tried to force restart the Apple Watch to see if the issues persist?
Press and hold both the side button and Digital Crown until the screen turns black and the Apple logo reappears, then release both buttons. Your watch may take a few moments to restart
If the issue is not resolved, you might need to set up hardware service for your watch. Please do so by Contact - Official Apple Support
You need to contact Apple Support tier 1 first so that diagnostic procedures are done and a support ticket is opened if the issue isn’t resolved. Once the ticket is opened and you have the ticket number, you can request it get escalated to a higher level of support. You can continue the process until it reaches engineering. It’s quite rare issues reach that level of support.

Yes, I've already tried force restarting the device, factory resetting it, and even unpairing it.
However, the problem persisted today right after I washed my hands. The screen turned off after about five minutes.
For your information, I tried contacting the technical support team but couldn't reach them. There seems to be no option for a direct conversation.
