My watch updated to OS 11.1 this morning, & the watch face has changed to some horrible design THAT I DIDN'T WANT & still don’t - the original I’d modified to suit my needs has disappeared completely. Why?

Apple changed the available Watch faces and their complications in the newest update.
The Apple Watch User Guide for watchOS 11 lists only these watch faces:

You can let Apple know directly about your wishes by using the Feedback link, Apple does not follow these user to user communities.

Did you check for your old Watch Face in the iWatch app on iPhone? It should still be there along with all your set Complications.

I was not aware of Apple changing the Watch Faces with latest update. User Ingo2711 has best advice. You can let Apple know your thoughts on their Feedback form.
