Which template in Pages is best for writing Hard Cover Book?

I am wondering which template in Pages is the best one to use to write a book of essays. It will have few if any pictures. I have a Mac Book Pro that is 7 years old and am running macOS Sequoia.

I want to take the essays I have written and saved and cut and paste them into a template that I can send off to be published as a hard copy but am not quite sure which template to use.

Any suggestions?
