I don't see any of the normal software issues that would cause a Kernel Panic. The read speed of the internal SSD is slow....usually the write speed is lower than the read speed so this is unusual.
Post several of the Kernel Panic logs here so we can examine them for possible clues. Unfortunately the EtreCheck Kernel Panic log summary did not include any useful information. The Kernel Panic logs can be found in "/Library/Logs/DiagnosticReports" and possibly in the "Retired" subfolder. The Kernel Panic logs usually have "kernel" and/or "panic" in their file names. Post the complete Kernel Panic log here using the "Additional Text" icon which looks like a piece of paper on the forum editing toolbar.
You can try disconnecting all external devices in case one of them is causing a problem.
Try running Disk Utility First Aid on the hidden Container since the apfsd daemon crashed several times. Within Disk Utility you may need to click "View" and select "Show All Devices" before the hidden Container appears on the left pane of Disk Utility. Even if the First Aid summary says everything is "Ok", click "Show Details" and scroll through the report to see if any unfixed errors. If there are any errors or warnings shown, then run First Aid again until they are gone. If after several scans the errors remain, then try running First Aid while booted into Recovery Mode.
FYI, you are a bit behind on macOS updates. Ventura is now at 13.7.1. You may want to install the Ventura updates to see if that makes any difference.
