I need to get a list of correspondence I've had in text on my iphone to summarise a dispute. I've seen how to identify all the texts but it then only seems to allow me to forward at a text message

Beside doing screenshot, you can purchase touch copy or imazing to export data from your phone to pc/mac.
I use iMazing, one of the applications razmee209 recommended. It allows you to archive your messages to text or pdf files. It's not free but if you like to keep records of your messages, it's great.
I would add that, if this is for a legal matter, you may want to consult with your attorney before doing anything. They may have specific advice that will prevent issues later on.
