I have an iCloud account plus a family sharing iCloud account with my son, how do I know which files are on which account? I'm going to purge the family sharing, but I don't want to do that without knowing which files would be lost.

Files belong to the Apple ID. Whatever is in each of your Apple IDs in iCloud belongs to each of you. If one out the other does not have enough space if your end sharing they could lose files over time
Your son cannot see your files now. Being in family sharing does not grant access to other family member files.
So if I understand you right when I drop out of family sharing, only my son would not be able to see my files and I would still have full access to those files.
